This refreshing and nutritious salad is not only great for weight loss but is also packed with essential nutrients. We believe it’s an ideal batch salad for lunchboxes to enjoy in the following days. Unlike salads made with delicate lettuce leaves and dressings that tend to become soggy over time, this salad maintains its freshness and vibrancy for up to two days.
Ingredients
Salad Ingredients
280g salmon (we used two tins of boneless salmon)
240g butter beans (drained)
3 tomatoes (quartered)
1 bell pepper (finely chopped)
1 red onion (finely sliced)
40g cucumber (cubed)
Small handful chopped parsley
Optional
1 ½ avocado (half an avocado cubed per serving)
Dressing
3 tsp olive oil
1 tsp Dijon mustard
Juice of half a lemon
Pinch of salt and pepper
Method
Throw all the salad ingredients into a large bowl, along with the chopped avocado, if using.
Pour over the salad dressing and give it a good mix together.
Serve out three portions into bowls. Option to serve with a soft-boiled egg for some extra protein.
