Ingredients
1/2 watermelon, cubed (weighs approximately 900g with the rind). Ensure you remove and discard the rind first
140g Feta (cubed or crumbled)
45g rocket
35g Jalapeños slices or sliced green serrano chillies from a jar
1 large mint leaves (torn into little pieces)
Drizzle of a good quality Balsamic vinegar

Simply mix all the ingredients in a large bowl and then serve out.
