A different kind of slaw… one that has zest and a mouthwatering tang, offset with the delicious crunch of cabbage and peanuts. We love to serve this side dish with fish cakes or a fillet of salmon. You can also enjoy this asian slaw on its own as a delicious lunch option or pack up leftovers for your work lunch box.
Ingredients
200g white cabbage (shredded)
200g red cabbage (shredded)
2 large carrots, grated
80g peanuts, roughly chopped
Dressing
2 tbsp apple cider vinegar
2 tbsp sesame seed oil
2 tbsp tamari
1 tbsp honey (or maple syrup if vegan)
juice of 1/2 lime
large thumb-sized stick of ginger, grated
garlic clove, crushed
Method
Mix both types of cabbage, carrots and peanuts into a large bowl.
Mix together the dressing ingredients into a jug and pour over the ingredients that are in the bowl.
Mix together with a fork so that the dressing mixes through thoroughly with the other ingredients.
Serve up as a side dish with your favourite source of protein and enjoy!
