I am a massive nut-milk lover! I find them to be so creamy and filling.
This is by far one of my favourite recipes around Christmas time, full of healthy fats and combining some of the most indulgent ingredients such as vanilla and cinnamon. It is simply a Christmas dessert in a glass.
I have used natural sugars for the sweetener such as dates, tangerine and sultanas, and of course you guys know how much we love to squeeze veggies in wherever possible, including our drinks. We have included carrot which compliments the drink perfectly with its sweet, bitter and slightly fruity taste. Not to mention the high vitamin A content that carrots provide, which is great for eye health, skin health and tissue repair!
Ingredients
1 cup ground almonds
4.5 cups filtered water
3 medjool dates
1 small carrot, peeled and chopped
1/4 cup sultanas
1/2 tangerine
1/4 cup desiccated coconut
2 tsp vanilla extract or 1 vanilla bean pod
1 tsp ground cinnamon
1/2 tsp pink himalayan salt
Method
Quick and simple, just place all the ingredients in a blender and blend until smooth. Add a dash more water if you find its too thick for yourself but ensure you do not dilute it too much! Don't forget to add ice and chill in the fridge.
