These are the ultimate Christmas cookies! It's the cranberries & cinnamon that make it! This is the perfect treat to make on Christmas Eve and nibble on whilst watching all the Christmas films.

These are cookies with a difference, because they contain healthy fats, unrefined sugars and non-processed ingredients. Not only are they scrumptious, you can bake them ahead of guests arriving for a cuppa and enjoy together.
As always, ARDERE uses ingredients that are great for those who suffer with allergies and intolerances. You won’t find any wheat or gluten, nor any cow’s milk in these cookies, so that you can be sure that your digestion is not disturbed whilst you chow down on these tasty afternoon treats.
Cinnamon and cranberry adds a wintery touch to these treats so you can also enjoy them during the festive period. Why not leave them by the chimney for Santa? That way he can munch on some healthy plant-milk and cookies this year!
Ingredients
250g almond flour
75g cacao nibs
75g cranberries
5 tbsp maple syrup
2 tbsp coconut oil, plus extra for greasing.
2 tsp ground cinnamon
1 tsp bicarbonate of soda
1 pinch of sea salt
Method
Preheat the oven to 180 degrees (gas mark 6).
In a mixing bowl, combine the bicarbonate of soda with the almond flour.
Melt the coconut oil in a small saucepan. Now add the coconut oil and the rest of the ingredients into the mixing bowl and stir.
Line a baking tray with some baking parchment and grease with coconut oil.
Take 2 tablespoon sized amounts of the mixture and start to roll into balls, flattening them enough to lie on a baking tray.
Flatten each cookie a little bit more with your hands, ensuring that they are about 1cm thick.
Place in the oven and bake for 12 minutes until browned on the sides.
Remove from the oven and leave to cool on the tray. Do not worry if they are still a little bit gooey and not sticking together, because they will firm up when they cool, so try to leave them in their original shape.
Enjoy! Serving suggestion: enjoy with some warm almond milk.
Note: You can freeze the rest of the cookies and store the others in a sealed container inside the fridge.
