A scrumptious gluten and dairy-free chocolate melt-in-the-middle pudding. This is my absolute favourite dessert that will always satisfy those with a sweet tooth.
In our house we love to keep this dish as ‘gooey’ and soft as possible, so that it literally melts in the mouth. It’s quick to make and is a sure-fire crowd pleaser, so if you are stuck on dessert options… I’ve got you covered!
For those of you who are dairy-free, you can simply use coconut oil instead of goat’s butter; either way it is super delicious.
Ingredients
125g Chocolate (I used Green & Black's Dark chocolate)
125g coconut oil (for dairy-free) or 125g goats butter (if wanting non dairy-free)
4 eggs (2 whole eggs + 2 egg yolks)
4 tbsp Coconut sugar
2 tsp gluten-free self-raising flour
Method
Set the oven to 220 degrees.
Melt the chocolate and coconut oil/goats butter in a bowl over boiling water in a pan. Stir until it's all melted in. Once melted remove the bowl from the hob so that it cools but remains runny.
Mix the eggs and coconut sugar in a separate bowl and whisk until frothy and thick.
Pour in the chocolate mixture and flour and mix.
Use a knob of coconut oil/goats butter and grease 4 ramekin dishes.
Pour the mixture evenly into the 4 ramekin dishes, it will fill to about half way up each dish.
Place in the oven for 11 minutes and let them rise.
When the time is up, simply remove from the oven and quickly serve to ensure the middle remains gooey!
