This heart-warming winter dessert is absolutely full of flavour. For those who are gluten-free, there’s no missing out on this scrumptious recipe either and it is very nutritious too. Full of fibre, fruit and delicious nuts, this is a great choice and avoids high amounts of added sugars which can be commonplace in most desserts.
If you don’t have hazelnuts in, no problem! Simply substitute for your favourite nut of choice, whether it be almonds, pecans, whatever takes your fancy.
The dusting of cinnamon and wintery fruits that pack a whole lot of punch makes this crumble a delicious dessert to enjoy around the festive season.
Gluten-free Apple-Blackberry-Hazelnut-Crumble
Ingredients
6 apples (option to peel or leave skins on)
300g blackberries
150g hazelnuts (or hazelnut flour)
3 tbsp coconut oil
225g gluten-free rolled oats
1/3 cup maple syrup
3 teaspoons cinnamon
Serving Suggestion
Serve with dairy-free ice cream or vanilla custard
Method
Start by making the crumble. Place the hazelnuts into a food processor and blend for a couple of minutes into a flour, then decant into a large mixing bowl. Mix in the oats.
Heat the coconut oil in a saucepan and mix through with the the maple syrup and 2 teaspoons of cinnamon. Now pour this over the dry oat ingredients in the bowl and set aside.
Heat the oven to 180 degrees Celsius.
Now peel and core the apples, cutting into rough square-sized chunks (note: you have the option to leave the apple skins on if you prefer). Place these in a large saucepan along with the blackberries and add a splash of boiling water (just enough so that it covers the fruit and is about an inch high). Sprinkle the remaining teaspoon of cinnamon and leave to simmer for about 15 minutes, until the fruit is reduced down and softened.
Once the fruit mixture is ready and you have taste-tested it, decant into a large baking dish and even out. Now add the crumble layer on top and place into the oven to bake for about 25-30 minutes until golden brown and crunchy.
Serve up with some ice cream or custard and enjoy!
