A little spicy, wonderfully creamy and packed with flavour, these Peanut Chilli Oil Noodles are the kind of bowl you’ll want to make on repeat. Nutty soba noodles and tender broccoli are tossed through a rich, punchy peanut chilli sauce, then finished with a savoury golden smoked tofu crumb.
Completely vegan and naturally protein-rich, it’s a nourishing, satisfying dish that doesn’t compromise on flavour, and if you’re gluten-free simply use buckwheat noodles.
Ingredients
250g soba noodles (or 100% buckwheat noodles if gluten-free)
1 head broccoli
2 tbsp sesame seeds
Smoked Tofu Crumb
300g organic super firm smoked tofu (drained, dried and grated using a cheese grater)
1 tsp garlic granules
1 tsp onion granules
1 tsp smoked paprika
2 tbsp extra virgin olive oil
Pinch of salt
Sauce
1/2 cup smooth peanut butter
1 shallot (minced)
2 spring onions (thinly sliced)
4 garlic cloves (minced)
1 thumb-sized piece of ginger (peeled and mined)
2 tbsp chilli crisp
1/4 cup gluten-free soy sauce
3 tbsp rice vinegar
Juice of one lime
2 tbsp sesame oil
Method
Preheat the oven to 210 degrees celsius.
Line a baking tray with baking parchment and spread the grated tofu evenly over the tray.
Sprinkle the garlic granules, onion granules, paprika and salt over the tofu. Drizzle with the olive oil and mix well with your hands until the tofu is evenly coated.
Place in the oven for 30 minutes, turning the tofu halfway through, at the 15-minute mark.
Once golden and slightly crisp, remove from the oven and set aside.
Add all of the sauce ingredients, apart from the sesame oil, to a bowl and mix well.
Meanwhile, bring two pans of water to the boil.
Chop the broccoli into small florets. Add to one pan and boil, or steam over the pan, for 5–8 minutes until tender.
In the other pan, cook the soba/buckwheat noodles according to the packet instructions.
Heat the sesame oil in a large pan over a medium-high heat. Once hot, add the sauce mixture and stir continuously until warmed through.
Drain the broccoli and noodles, then add them to the pan with the sauce. Toss well to ensure everything is evenly coated.
Drain the broccoli and soba noodles and add to the pan with the sauce, stirring ensuring everything is covered.
Divide between four bowls. Top evenly with the smoked tofu crumb and sprinkle each bowl with ½ tablespoon of sesame seeds.
