A citrusy 🍊and refreshing twist on roast chicken 🍗 for you today. We love mixing things up from the traditional Sunday roast in the summer season 🌞.
.
This oh so succulent and juicy dish is popping with flavour and incredibly moreish. Serving suggestions include serving with your favourite roast vegetables or home-made sweet potato wedges 🍠, salad 🥗 and coleslaw.
.
I created this dish with a nutrition client in mind who needed a good source of protein for dinner but was tired of the same old chicken dish and needed something that wasn’t that fussy to make. This simple dish takes only 5 minutes of prep whilst the rest the time the dish cooks and marinates in the oven, leaving you to get on with the rest of your daily tasks. It’s a perfect revival of a classic chicken dish for the entire family to enjoy.👨‍👩‍👧‍👦🍽

31 degrees today and we couldn’t be happier 🌞 whilst it’s the prime time to soak up that all important vitamin D here’s our reminder tick list ✔️📃whilst you’re enjoying the heat:
.
∼ Apply a high factor sun cream (minimum factor 30 that is a broad spectrum, protecting you from both UVA and UVB rays)🧴Remember, make-up containing SPF is not enough sun protection coverage for the face; apply some sun cream prior.
.
∼ Top up your sun cream regularly throughout the day and don’t forget your ears, especially for those with short hair and those who tie their hair up (the ears are commonly missed)! 👂🧴
.
∼ If the sun gets too much, make sure to have a few hours in the shade. 10:00 AM until 4:00 PM is when the sun rays are the most intense ☀️
.
∼ Try and aim for drinking 2 litres of water a day to stay adequately hydrated💧
.
∼ Accessorise your wardrobe and protect your eyes with some shades 😎. This is not the time to go cheap; make sure your glasses have UV protection.
.
∼ Throw on a hat🧢 - those with hair partings or a close-cut will know all too well the slightly sore and pink scalps that follow a sunny day...and the flaky skin that soon follows ❄️
.

NEW RECIPE: PEA & MINT SOUP 🌿 🥣

As far as soups go, this recipe is a summer favourite. Soups tend to go down in popularity during the summer months 🌞 as people crave more cooling 🧊 dishes, but the mint in this dish makes it an ideal choice.
.
Mint 🌿 adds that freshness we look for when we're in hot climates 🌞 and is a renowned herb for its anti-inflammatory, antioxidant and analgesic effects 🙌🏻. Peas are also full of health-promoting properties due to their concentration of fibre, protein, vitamins, minerals and phytochemicals. The seed coat fibre helps towards gastrointestinal function and is also thought to have antioxidant and anti-carcinogenic activity, as well as wielding prebiotic effects within the large intestine.
.
Mint and peas are best grown and sown in the spring months so there’s no better time to indulge in this soup throughout the spring and summer seasons 🍵

We decided not to post all of this past week following BlackOutTuesday. Posting a day or two immediately after with other things felt inauthentic to us, we wanted to give it a little time.
.
What we have been doing is listening, reading and donating. People including ourselves need to make a life-long effort of learning and work, things will not change over night but you can make a start. One of the most moving programmes we watched this year revolving around racism was ‘When They See Us’ which Kevin Richardson, one of the victims of racism and featured in the series says: ‘It’s painful but NECESSARY to watch so that things change now’.

Ava DuVernay (Director of When They See Us): ‘I just want to shake everyone’s shoulders and say, ‘Don’t you know this is happening?’ And, if you don’t know, let me show you. And, once you’ve seen it, now it’s on you. You can’t say that you’re ignorant anymore. You know this is happening. What kind of people are we if we turn our eyes to this?”

Co-founder @laurenwindasnutritionist is sharing a little bit about her relationship with her gut and the impact that stress played a part in, plus read on for our gut health GIVEAWAY!

“As a result of battling with M.E / CFS, my energy levels were not the only thing out of whack. No matter what I did, or what food I ate… my gut would be in agony when I woke up most mornings, with the worst bloating and pain imaginable 😞.
.
I’d always had a sensitive gut but due to chronic illness the situation got a heck of a lot worse. I would log my symptoms against a food diary 📔, following strict elimination diets in order to keep a handle on things and supplement with various neutraceuticals to try and correct the imbalances that were underlying the issues.
.
It took me a long time to realise, though, that stress was a major component of the problem. Whilst I spent a lot of time racking my brains trying to figure out what food was the problem…. it eventually dawned on me that the missing link was the terrain itself, not just food!
.
I was eating one of the strictest diets at the time and failing to recognise that stress was a huge culprit; I had such a phobic relationship with food which was inciting anxiety and stress… causing a vicious cycle that meant no matter what I ate, I had digestive symptoms as a result.
.
The network of neurons in our gut (known as the enteric nervous system) can become hyperaroused due to stress and as a result you will be unable to digest your food properly 🥗🌮🥦🚫. That’s why getting a handle of stress is PARAMOUNT to improving your digestion.
.
Over the years I’ve spent a lot of time nurturing my relationship with food because I believe that you could eat the healthiest diet in the world and you still experience gut issues if you are chronically stressed. The two go hand-in-hand 🤲🏻, and so I urge you to pay focus to your mindset 🧠 and stress levels ⚖️ as a key piece of the jigsaw 🧩 puzzle that is IBS.”
.

1️⃣Reduce stress in your life - your gut is easily influenced by your stress levels. If you’re stressed you can suffer from poor digestion and symptoms of IBS can flare up for those that suffer. Find whatever keeps you stress-free whether that’s your morning meditation🧘🏻, a brisk walk 🚶🏽‍♀️in the park 🌳or the ritual of lighting your favourite candle🕯
.
2️⃣Eat more fibre – fibre 🍆🥦🥕🥬 is a plant-based carbohydrate that passes through the digestive system unchanged. Most of you will have heard of soluble and insoluble fibre, but over 100 different types of fibre have been identified. Fibre can easily be found in plant foods such as fruits, vegetables, nuts, seeds and wholegrains. Its important for encouraging healthy bowel motions and can even protect us against type 2 diabetes, heart disease as well as colon cancer. *A point to note, whilst fibre is your friend, it can in some cases aggravate digestive problems like IBS, especially when increased very rapidly in the diet. If that’s you, low and slow, is our motto!👌🏻

3️⃣Drink more water💧 – 75% of our stools are made up of water💦, therefore to have a healthier bowel movement and prevent constipation, drinking more H2O can really help with getting things moving! Aim for 2 litres a day to stay well-hydrated.
