Buckwheat is a pseudograin that’s high in a type of prebiotic fibre called resistant starch, which can feed your friendly gut bacteria. Paired with antioxidant-rich carrot and pear, this dish sets you up for a nourishing start to the day.
Ingredients
80g buckwheat flakes
175 almond milk
1 carrot (peeled and grated)
1 pear (cored and grated)
1 tbsp chia seeds
Optional
25g sultanas
Method
Mix all the ingredients together in a small bowl or glass tumbler.
Enjoy straight away or refrigerate overnight to allow the buckwheat to soak up the moisture from the almond milk. In the morning, remove from the fridge, adding a little more almond milk if needed.
