If you find yourself craving crisps or something salty this is the perfect healthier alternative. Made from just 4 simple ingredients, kale, salt, olive oil & nutritional yeast and hey presto, you have a moreish snack to enjoy in just 10 minutes in the oven.
Kale is one of the most nutrient dense foods around and is a great source of plant-based calcium contributing towards strong bones and teeth. It is also one of the green leafy vegetables that has one of the lowest levels of oxalates allowing calcium absorption to be absorbed more efficiently. (Oxalates are naturally found in plants and humans and is not a required nutrient as too much oxalates can lead to kidney stones. They bind to calcium and can prevent maximum calcium absorption).
The kale is flavoured with nutritional yeast which is a great source of vitamins and minerals and can particularly benefit those who adhere to a vegan or vegetarian diet where they can struggle to get some essential vitamins. Most brands have them fortified with vitamins and due to its natural cheesy and nutty flavour it can be added to pretty much any savoury dish.
Ingredients
180g kale
2 tbsp olive oil
Sprinkling of salt
2 tbsp nutritional yeast
Method
Preheat the oven to 180 degrees.
Distribute evenly the kale on to two baking trays.
Drizzle a tbsp of olive oil on to each tray of kale and give it a gentle mix.
Sprinkle on the salt (we use Himalayan salt) and a tbsp of nutritional yeast onto each tray of kale. If you prefer simply salty kale crisps instead of 'cheesy' then skip adding the nutritional yeast.
Place in the oven for 10 minutes and bake until they have gone crispy, if you find they are still a little soggy then leave in the oven for an additional 2 minutes. Once done, remove from the oven and enjoy!
