Try making our delicious gluten free oat and chocolate chip cookies, using 8 ingredients; they take only 20 minutes to make and are ideal to make ahead of the working week so you can pack one in your lunchbox.
Ingredients
100g plain gluten-free flour
200g gluten-free oats
80g dark chocolate chips (we use large cacao buttons or break up some Green & Blacks dark chocolate)
100g coconut sugar
85g goats butter or regular butter
1 egg
1tsp baking powder
Pinch of salt
Optional
4 tbsp desiccated coconut
Method
Preheat the oven to 180 degrees.
In a bowl, mix together the flour, oats, chocolate chips, baking powder, salt and desiccated coconut (if using).
In a separate bowl mix together the goats butter and coconut sugar. Once combined, then mix in the egg.
Add the butter, sugar and egg mixture to the main baking bowl that contains the rest of the ingredients and combine together.
Using your hands roll the mix into small ping-pong sized balls and place on a baking tray.
Using the palm of your hand, flatten each ball so there’s not too thick.
Bake in the oven for 15 minutes and then leave on the side to cool for a few minutes. We love to eat one or two when they’re fresh out of the oven and the chocolate chips are still gooey.
