A delicious and nutritionally balanced lunch with a perfect trio of macronutrients (which is also high in omega 3 fats), teamed with a flavourful miso dressing, yum!!
Simple. Nutritious. Oh so delicious!
p.s. to make it AIP-friendly, serve without the miso paste.
Ingredients
2 smoked mackerel fillets (skinned and chopped into chunks)
1 sweet potato (cubed)
1 carrot (peeled and grated)
1 pak choi
1 spring onion (sliced)
1 handful of radishes (grated)
1 handful of coriander (chopped)
1 tsp coconut oil
Dressing
1 tbsp coconut aminos
2 tsp white miso paste
Juice of 1/2 lime
Method
Place the sweet potato cubes in a saucepan and pour over approximately 5cm of water, bringing to a boil and then simmering for 15 minutes. You may need to add a little more water as you go, depending on how dry the pan gets. Test with a fork to see if the potato is fully cooked, and then drain any remaining water from the pan.
Add the coconut oil to a frying pan and fry the pak choi leaves for 3–4 minutes, until softened and slightly golden.
Whisk the dressing ingredients together in a bowl.
Divide the carrot, radish, sweet potato, pak choi and mackerel between two poké bowls, followed by the spring onion and coriander, drizzling your dressing over the top.
