A grain-free porridge sensation, this one’s quick to prepare and packs a wealth of fibre, including pectin, a prebiotic found in the stewed apple.
Ingredients
1 apple (cored snd cubed)
1 tbsp cinnamon powder (plus extra for the stewed apple)
3 tbsp desiccated coconut
3 tbsp flaxseed powder
80ml almond milk
1 tsp ground turmeric
1 tsp honey (or maple syrup if you are vegan)
1 tbsp coconut yoghurt (optional)
20g walnuts, chopped or broken into pieces
Method
Simmer the apple pieces in a saucepan over a medium heat with a splash of water. Add a sprinkle of cinnamon and stir for 10 minutes, until softened and sweet, adding more water if required.
Meanwhile, mix together the remaining ingredients in a bowl (apart from the walnuts and coconut yoghurt, if using).
Serve the apple and walnuts on top of your 'porridge' with the coconut yoghurt, if using.
