Description
These almond butter date balls are the perfect fix for those sweet cravings when you’re on the go. I always make a batch ahead of a busy week, so that whenever I need a little pick-me-up, I have something delicious to turn to.
They have the perfect combination of all things crunchy, soft and sweet. I tend to tuck some away in my lunchbox during a day of back-to-back lectures. So yummy!

Ingredients
6 tbsp cashew butter (or nut butter of your choosing)
2 tbsp cacao powder
1/4 tsp vanilla powder
4 medjool dates, pitted
2 tbsp almond flour
1 tbsp cacao nibs
1/4 tsp cinnamon (optional)
Method
Blend the dates in a food processor. Add 1 tbsp of water if you need to.
In a mixing bowl, add the cashew butter, almond flour, cacao powder, vanilla and cinnamon (if using) and mix together with the dates. Stir in the cacao nibs.
Roll into tablespoon-sized balls. If you feel that the mixture is too soft, then add another tablespoon of almond flour. Serve straight away or alternatively you can refrigerate to enjoy later.
