These brownies are such a winner in our household…
We absolutely love making them for any guests that come to visit and they always disappear within an instant!
They are so warming and comforting; a great comfort food during the cold months and an indulgent treat when you are most in need.
Its amazing to think that this is a flourless brownie because the sponge is so airy and light!
Make it with or without the sauce depending on what you’re craving. You can heat it up and serve it warm to give it that extra touch of comfort.
We’ve used magnesium-rich cacao powder as this is fantastic for the nervous system, whilst also avoiding refined sugar, dairy and gluten-containing grains for those with sensitivities.

Ingredients
To make the brownies:
3 eggs
1 tsp vanilla extract or 1/2 tsp vanilla powder
1 tsp cinnamon
170g cashew butter
125g coconut sugar
60g high quality dark chocolate
1 tsp bicarbonate of soda (gluten-free if you suffer with an allergy or intolerance)
Coconut oil, for greasing
For the sauce
1.5 tbsp cacao powder
2 tbsp coconut sugar
1/2 cup coconut milk
Method
For the brownies
Heat the oven to 180 degrees.
Add the eggs, vanilla extract, bicarbonate of soda, cinnamon, cashew butter, coconut sugar into a mixing bowl and stir until smooth.
Mash up the chocolate into pieces. It may be easier to use the end of a rolling pin to help smash the chocolate into tiny pieces. Add into the bowl and stir through.
Line a baking tin with greaseproof paper (we use coconut oil to do this). Now pour the brownie mixture into the baking tin and spread through evenly.
Bake in the oven for 30 minutes.
After half an hour, remove from the oven and test with a skewer to ensure that no crumbs stick (this ensures that the brownies are thoroughly cooked).
Leave the brownies to cool for 10 minutes and then slice them into square-shaped pieces.
For the sauce:
Mix the cacao powder, coconut sugar and coconut milk in a saucepan and heat on the stove for 2-3 minutes until it just starts to bubble.
Once you've plated the brownies, pour your preferred amount of hot sauce over the brownies and serve.
