We are HUGE fans of Mexican cuisine, it’s filling, full of colourful veggies, smothered in delicious healthy sauces, what’s not to love?
This big bowl of healthy fats is perfect for a Mexican dinner party, whether its spooning it onto fajitas, used as a dip for nachos and you can even smoother leftovers on your slice of toast the next morning.
3 large avocados (pitted, skin removed)
8 tomatoes (diced)
1 white onion (diced)
2 thumb-sized pieces of ginger (grated)
3 jalapeños (diced)
1 large handful of fresh coriander (chopped)
Juice of 2 limes
Sprinkling of salt
Smash the avocado together in a large bowl until it becomes a smoother consistency.
Stir in all of the remaining ingredients and mix well.
It's ready to enjoy! Spoon over tacos, fajitas or use as your nacho dip for a dinner party.
