Bursting with Asian flavours, these beef mince lettuce boats are a real winner whenever you’re lacking lunch inspiration. A perfect blend of protein, healthy fats and fresh vegetables, they are super quick and easy to make, not to mention they’re AIP friendly!
Ingredients
1 tsp coconut oil
400g beef mince
1 red onion (diced)
2 tbsp grated ginger
6 baby button mushrooms (diced)
1 carrot (grated)
4 tbsp coconut aminos
1 avocado (pitted and chopped into cubes)
1-2 romaine lettuce hearts (or Chinese leaf)
Method
Heat the coconut oil in a large frying pan over a high heat.
Add the beef mince and fry for about 8–10 minutes, stirring, until the beef is crispy and golden brown.
Reduce the heat slightly and add the red onion, grated ginger, mushrooms, carrot and coconut aminos and continue to cook through for a further 5 minutes, until everything has softened.
Divide the lettuce leaves between four plates and spoon over the mince mixture with the diced avocado on top.
